Ludlow - Butchers

One of the highlights of the Ludlow food festival is the sausage trail. You buy a ticket that entitles you to one sausage in each of Ludlow's butchers. You visit each shop in turn, where they have cooked their sausage, and you score each sausage. When you've visited all the shops you hand in your voting paper and receive a sausage of your choice. The sausage trail has been a victim of it's own success, the queues tend to be rather large. I think the sausage trail could be copied by other towns (e.g. Nantwich).

The first Ludlow butcher to mention is Mike Wall (trading as D W Wall & Son) who has been voted "Butcher of the Year" by the Rare Breeds Survival Trust (which is changing its name to Traditional Breeds Meat Marketing). A lot of people don't realise that eating rare breeds actually helps the survival of the breed! Walls are also licensed game dealers.

Sadly Carters family butchers stopped trading last year but Chris Carter has passed on his recipes to Walls who now make some of their sausages.

Andrew Francis started a butchers business in Kwik Save, but then took over another well respected butchers, Reg Martin & Sons. They sell free-range rare-breed pork and free-range chickens and also venison and other game.

All beef, pork and lamb sold in Alan Griffiths's shop are purchased locally (they have an abbatoir in nearby Leintwardine) . They sell home-cured bacon, hot and cold pies, free-range eggs and award-winning pork pies.

I think there used to be 6 butchers in the sausage trail, it's now down to four (I've not yet covered the Ludlow Food Centre). The moral is simple, use them or loose them!

Thank you for publicising the Ludlow sausage trail. We're very lucky in Ludlow to have the choice of great butchers that we do and the sausage trail is a 'must do' for sausage lovers!
