Ingleton Gingerbread

I've finally got to Oakroyd Bakery in High Bentham, who are famous for their Ingleton Gingerbread (Ingleton is actually 3 miles away).
They specialise in hand made cakes and puddings.  They make a Yorkshire Sticky Tea loaf, which according to HRH Prince Charles is "a serious cake".  It's moist and keeps well and should be served in the traditional Yorkshire way with Wensleydale cheese.  

For pudding they make a Sticky Ginger Pudding which is based on their gingerbread and covered with a rich toffee and stem ginger sauce.  Their award winning Sticky Toffee Pudding is  made with dates and cream and was popular in our house:
Ingleton gingerbread is a moist sponge, made with free range eggs:
It's a rich moist cake with a hint of sweetness and is made with ginger and cinnamon.  It keeps for about a month, if given the chance!

wow, looks like a fantastic shop. my other half is rather partial to all things ginger so would love this shop. Nigella Lawson does a great recipe for sticky gingerbread in her Christmas book. It keeps well and freezes beautifully! A good substitute if you can't get up to Ingleton
