Thornton-le-Dale - Ginger Pig

The Ginger Pig have three butchers shops in London (in Borough Market, Hackney and Marleybone). The owner of Ginger Pig is Tim Wilson, who has three farms in Yorkshire, and has won the Observer's best producer award. The Ginger Pig takes its name from its large herd of Tamworth pigs, which have rich chestnut coats. They sell traditional cuts of meat and game when in season.

I too love Ginger Pig - I shop at the one in Borough every week. Last night we had the most fabulous grilled pork chops. Pure pleasure.
