Edwards of Conwy was an extremely busy shop when I called. It's run by Ieuan Edwards, a farmer's son from the Conwy valley. The shop has over 30 staff and has won numerous awards.
It's a traditional butchers, but they're not afraid to be innovative. For instance you could try their award winning Welsh Breakfast Sausage, or Welsh Lamb and Leek Sausage, or something completely different like their Merguez Sausage, or South African Boerewors or their Tropical Pork Sausage. They also do healthy sausages, which have reduced levels of salt and fat.

They specialise in Welsh black beef, when available, and get their beef mainly from the Conwy valley and and the Vale of Clwyd. I bought some oxtail and was surprised how much meat was on it. They sell also Salt Marsh Welsh Lamb, from the salt marshes near Harlech, when available.
Their pies are baked on the premises. They also sell cheese including Caws Cenarth, Snowdonia Black Bomber, and Y Fenni (mature Welsh cheddar with mustard seed and ale).
