Poilâne bakery is situated on Elizabeth Street, not far from Victoria Coach Station. In 1932 Normandy baker Pierre Poilâne opened a shop in Paris, making bread using stone-ground flour, natural fermentation and a wood-fired oven. His son Lionel took over the business in the 70's. Customers included the artist Salvador Dali, who bought objects and sculptures made of bread.
In 1992 Lionel opened a shop in London, it took him over 2 years to obtain the permission to use a wood-fired oven, the authorties obviously remembered the cause of the Great Fire of London in 1666! In 2002 Lionel died in a helicopter accident, the business is now run by his daughter Apollonia.
