Marleybone - The Ginger Pig

The Ginger Pig has already had a mention in this blog, when I was in North Yorkshire and staying near the farm of Tim Wilson (who owns the Ginger Pig).   Their Marylebone store also happens to be next door to La Fromagerie, a seriously good cheese shop.


The ginger pig gets its name from the Tamworth breed which they cross with Yorkshire or large white pigs.  They also have Berkshires, English Lops, Gloucester Old Spots and Welsh pigs.
The beef comes from their herd of Longhorn cattle.  Longhorns are a slow maturing traditional breed, which means the animals have long and happy lives and the beef tastes better.  


They make their own pies, sausage rolls, quiches and pates.   
Their pork pies are featured in the Independent's "Top 10 best pork pies". They even do pork pie wedding cakes!


Tim Wilson (with Fran Warde) has also written the Ginger Pig Meat Book, which recommends breeds and cuts for different styles of dishes and has recipes arranged by season 


They clearly understand here how good traditional breeds and non-intensive farming coupled with good butchery can make a real difference.  They even do butchery classes.   So if you've ever fancied making your own sausages...
