The Wensleydale Creamery

Hawes is the home of the Wensleydale Creamery, who proudly  tell you that they are the only makers of real Yorkshire Wensleydale cheese in the world!  This cheese was nearly lost for ever when Dairy Crest closed the creamery in 1992, transferring production over the border to Lancashire - upsetting everyone in Yorkshire!  However a management buyout took place, keeping jobs (and cows) in Wensleydale.
The recipe came from French Cistercian monks from the Roquefort region, so it's also available in blue:
